It's a different style than Anderson has seen and will take some getting used to, Standard admitted. Each will be served in a tapas or small plate format and will be featured with a suggested wine pairing made by Standard or their wine representative. The food will include items like Ahi tuna, salmon, braised beef, veggie pastas, scallops, pork tenderloin and more. "We have one of the largest stages and dance floors in town, we have two full bars, we have a private room that can be rented or used as a green room for the bands and we have one of the best selections of liquor downtown," he said. It's pretty obvious that more people are pairing their wines and beers with food and Deja Vu wants to capitalize on that while offering a different kind of nightlife experience than Anderson has seen recently. That atmosphere, according to Standard, looks like this: a music venue that focuses on premium cocktails, craft beer and a brand new wine menu that will compliment the debut of the food menu. Standard likes the flexibility a menu like that gives him because he can focus on flavor rather than large portions and the clean up can be managed within the confines of the atmosphere that Deja Vu is shooting for. The menu will change with the season and the whims of the chef, but will highlight local farms where possible and never feature more than 10 menu items on a given night. Where food is concerned, Deja Vu will be simple, locally-sourced and feature small plates, Standard said. And on Saturday, they will unveil their plans with a grand opening of the new Deja Vu. So Vining and Standard started brainstorming ways to utilize the kitchen that used to serve Matty's Downtown, Trio and the Pizza Buffet. "And when enough people ask for something, you need to listen." "We would have people coming in, asking if we served food and when we said 'no,' they would walk out," Standard said. That's when Casey Standard, a mainstay of kitchens around Anderson, came on staff and customers started asking if Deja Vu served any kind of food. Billed as a nightclub, Deja Vu went about business with liquor specials, beers on tap and cigars while trying to figure out what they might want to do with the space. And, Deja Vu, the former Cigar Bar and Pizza Buffet, is putting together a whole new atmosphere and vibe to go with their new ownership.ĭeja Vu opened rather abruptly a few weeks back after the Pizza Buffet and Cigar Bar shut down and the building was sold to new owner Cobra Vining. Because these guys don’t charge you much as you have paid earlier. However they also want you to remember how much did you pay then. If you have tasted a good food somewhere else be it a BBQ, Chat, Desserts, or Italian they want you to remember the best when you eat. Well the restaurant intends to leave you with the same feeling. So if you already know the literal meaning of Deja Vu – it means something familiar that you feel has happened before.
